1 lb. MATCH® Chicken , cut into small chunks
3 Tbls. salad oil
1 1/2 large onion, diced
1 1/2 Tbls. curry paste
2 tsp. curry powder
3 cans coconut milk
1/2 lime (juice of)
1/4 cup cilantro, chopped
1/4 cup basil (Thai), chopped
salt & pepper to taste

Yield: 4 servings
Sauté onion in 1 T. oil, add curry paste stir till coats onions well.
Add coconut milk and lime juice, reduce till desired thickness.
Add cilantro and basil then season with salt & pepper. Reserve.
Sauté Chicken chunks in remaining 2 Tbls oil for 5 to 8 minutes.
Add reserved curry mixture, heat through.
Serve with jasmine rice and steamed snow peas.
