                        Vegan Haven in the Least Likely of Places </p>

                        suburb of St. Louis, is an unlikely location to find gourmet<br />
                        and meat-free dishes. But this upscale restaurant, in<br />
                        an up-and-coming area of town, is leading the pack in<br />
                        offering just that. Currently on the menu is MATCH&reg;<br />
                        Crab-Stuffed Peppers (grilled jalapeno peppers, vegan<br />
                        crab and a creamy herb and cheese filling with red pepper<br />
                        sauce). Because the stuffed pepper is not strictly vegan<br />
                        and Cork&#8217;s management has received requests for strictly<br />
                        vegan fare, Cork will soon add a vegan chicken dumpling:<br />
                        a generous amount of tangy MATCH&reg; chicken, seasoned<br />
                        with lemon, garlic and pepper, wrapped in a dumpling and<br />
                        steamed, served with sautéed spinach and tomato. </span></p>

                              Conquest 4</a>, held in New York City on April 25.<br />
                              Veggie Conquest is an amateur vegan cooking competition.<br />
                              Before the event, chefs prepare a dish at home based<br />
                              on a secret ingredient revealed a week in advance.<br />
                              At the event, judges and tasters choose the top<br />
                              dish, prizes are awarded, and everyone chows down<br />
                              on the chef&#8217;s dishes and main courses created by<br />
                              volunteers. Both of the volunteer-prepared dishes<br />
                              utilized MATCH&reg; with our ground beef in the<br />
                              macaroni casserole and our chicken in the chicken<br />
                              potpie. When asked her opinions on MATCH&reg;, Veggie<br />
                              Conquest 4 attendee Brook Guthrie said, &#8220;As an EcoFriendly<br />
                              Chef, I travel the country constantly looking for<br />
                              new products and foods that will excite me, my viewers,<br />
                              readers, foodies and the public in general. Having<br />
                              seen, tasted and reviewed many food products from<br />
                              all corners of this Great Earth, it takes a whole<br />
                              lot to excite me. MATCH&reg; has done just that;<br />
                              I am excited to finally be able to tell others,<br />
                              &#8216;Yes there is a vegan ground beef that actually<br />
                              looks like ground beef. Yes, there is a healthy<br />

                        &#8220;most realistic fake meat ever.&#8221; The samples we sent to<br />
                        Chili Addiction went over so well, that two vegan dishes<br />
                        featuring MATCH&reg; are now on the Chili Addiction menu:<br />
                        a burger and a meaty chili. Chili Addiction is only the<br />
                        second restaurant in Los Angeles to feature MATCH&reg;,<br />
                        but we hope they won&#8217;t be the last. If you would like<br />

<blockquote><p>Join Jasmin Singer (Our Hen House) as she goes behind the scenes at the best new vegan event in New York City. Veggie Conquest is an amateur cooking competition like no other. Before the event, chefs prepare a dish at home based on a secret ingredient revealed a week in advance. At the event, judges and tasters choose the top dish, prizes are awarded, and everyone chows down and has a great time! This mini-documentary talks to the many wonderful people who made Veggie Conquest 4 possible, including the creator of the event (Jessica Mahady), the chefs, the judges, the volunteers, the sponsors, and the tasters.</p>

1 pound MATCH pork

<p><strong>Crab Cakes Ingredients:</strong></p>

<li>1/4 tsp celery seeds, crushed</li>
<li>1/2 tsp ground paprika</li>
<li>1/4 tsp Chipotle Chile powder OR hot pepper sauce to taste</li>
</ul>
<p><strong>Tartar Sauce Ingredients:</strong></p>
<ul>
<li>1/2 cup Veganaise</li>
<li>2 tbsp sweet pickle relish</li>
<li>1/4 tsp Herbamare Sodium Free Herbal Salt</li>
<li>Pinch white pepper</li>
</ul>
<p><strong>To make the Crab Cakes:</strong><br />
Start by combining all dry ingredients together in a small bowl.  Add wet ingredients and mix well.  Add onions, walnuts and garlic, and pour the mixture in a large bowl that contains the MATCH® crab.  Mix thoroughly.</p>
<p>Form 8 patties from the mixture.   Heat a large non-stick skillet coated with cooking spray over medium-high heat.  Working in batches, add the crab cakes and cook for two minutes.  Cover and cook for 1 minute longer, or until browned on bottom.  Coat the tops with cooking spray and turn over.  Cook for two minutes longer or until golden brown.</p>
<p><strong>To make tartar sauce:</strong><br />
Combine all ingredients.</p>
<p>Serve crab cakes with a dollop of tartar sauce.  Enjoy!</p>

<p>Now, without further adieu, Julie&#8217;s recipe:</p>
<p><strong>Ingredients</strong></p>
<ul>
<li>1 package MATCH® pork</li>
<li>1 tbsp garlic powder</li>
<li>2 tbsp liquid smoke</li>
<li>1 tbsp canola oil</li>
<li>1 tsp salt</li>
</ul>
<p><strong>McMatch Rib Sauce</strong></p>
<ul>
<li>1/2 cup Kraft Barbecue Sauce</li>
<li>1/2 cup Bullseye Barbecue Sauce</li>
<li>1 tbsp corn syrup</li>
</ul>
<p><strong>Preparation in Julie&#8217;s words:</strong><br />
<em>In a medium bowl, mix first five ingredients thoroughly. Roughly 1/2 cup of mixture makes a McMATCH Rib patty. Spray a sheet of wax paper with cooking spray and drop the scoop of MATCH® mixture on it. Fold over the paper and form it into a rectangle, roughly two inches by four inches, about a 1/2 inch thick. Spray cooking spray on a fork handle and press three or four grooves across the patty. Heat a skillet to medium high and spray with cooking spray. Brown the patties on both sides. Meanwhile, mix your sauce (or use any kind of barbecue sauce you want). When all the patties are browned, pour the sauce over them and flip them around until they&#8217;re all coated. Cover and simmer in the sauce for 10 minutes, until the sauce boils. Serve on toasted hoagie rolls with a piece of American cheese, two pickles and slivered onions to taste. Vegans: Omit cheese [or substitute a vegan cheese]. Everything else is already safe!</em><br />
