Match Vegan Crab Cakes

Ingredients:
3 tablespoons vegan mayo
1 tablespoons Dijon mustard
1 teaspoons dry mustard
¼ teaspoons hot sauce
1/8 teaspoons cayenne
1 teaspoons salt
¼ teaspoons black pepper
¼ cups parsley, chopped
1 lemons, juice of
¼ cups celery, fine dice
¼ cups onion, fine dice
¼ cups red pepper, fine dice
2 tablespoons Blue Agave (we have also recommended honey for sweetness, but always remind consumers that honey is considered non-vegan)

Other Ingredients:
1 pound Match Vegan Crab
1½ cups Panko Breadcrumbs
1 cup Panko Breadcrumbs for breading

Preparation:
Combine first 13 ingredients; add Match Vegan Crab meat and mix well followed by bread crumbs (use to tighten mixture).

Place breadcrumbs for breading into bowl.

Divide mixture into 12 equal portions and form into balls.

Place balls into breading and form cakes by hand.

Sauté cakes in canola or vegetable oil on medium heat until golden brown.

Finish in oven when ready to serve, 350F, for about five to eight minutes.
