1 lb MATCH® chicken
2 Tbs. olive oil
1/2 cup yellow onion (diced)
1 Tbs. garlic (chopped)
4 oz cream cheese (can use regular or vegan)
1 tsp. black pepper
1 tsp. salt
1 Tbs. lemon juice
8 oz frozen spinach (well drained)


1. In nonstick skillet on medium heat, sauté onion and garlic in 1 Tbs. olive oil. Add the well-drained spinach. Add cream cheese, salt, pepper, and lemon juice. Set aside.
2. Divide MATCH® chicken into five equal portions and flatten slightly. Spread 1/5 of the spinach mixture on each portion. Fold over and shape to resemble a stuffed chicken breast.
3. On medium heat with nonstick skillet and the remaining olive oil, lightly sear the MATCH® chicken breasts. 
4. Transfer the chicken breasts to a lightly oiled baking dish and bake for 15 minutes on 350.
